What is there not to like about these buttery, flaky, garlicky and cheesy scones? These scones are my all-time favourite dast and easy bread for those days I have a hankering for hot steamy bread but I don't have time and patience to knead the dough and let it rise for hours. They are delicious and filling and I have to stop myself from going for the next one right after I had my first! They are best served right after you take them out of the oven, hot and steamy! These scones are best served alongside a fresh salad though perfect on their own. They are easy and really quick to whip up with few ingredients. If you don't have buttermilk, make your own by adding one tbsp of lemon juice to your regular milk. Just give this recipe a try and you'll be in love with them for a lifetime.

ingredients

  • 245 g (2 cups) flour
  • 200 ml (3/4 cup) buttermilk, cold
  • 100g (1 cup) gouda or cheddar cheese, grated
  • 1 tsp garlic powder
  • 8g (2 1/2 tsp) baking powder
  • 78 g (6 tbsp) cold unsalted butter, cut into small cubes


optional topping

  • 30 g (2 tbsp butter, melted
  • 1 clove garlic, crushed
  • 1 tsp chopped fresh parsley/coriander

preparation

  • preheat oven to 180°C (360°F)
  • line the oven tray with baking paper
  • leave the buttermilk aside
  • place all the rest of the ingredients in a bowl
  • mix all the ingredients
  • using your fingertips or a fork, rub the butter into the dry ingredients until there are no big chunks of butter
  • add the buttermilk
  • mix to combine, but do not over mix
  • using your hand or a spoon make 6 unshapely balls and put them in the oven tray
  • mind that if you mix too much they won't be flaky and soft
  • bake for 15-20 minutes until golden brown
  • remove from heat
  • brush the tops of the scones with butter mixture if desired
  • best served warm
