With autumn just around the corner, pumpkin spice latte is the most common of drinks but if you don’t like the taste of pumpkin or simply tired of it, the carrot is a great replacement. This warm and comforting drink is one of those you must try as you snuggle up to take those hours of warmth during cold autumn days.
- 1 large carrot, boiled
- 8 walnut or pecan halves
- 1/2 tsp pumpkin pie spice a mix of cinnamon, nutmeg, cloves, cardamom & ginger
- 1-2 tbsp maple syrup or honey
- 120 ml / 1/2 cup almond or coconut milk
Using an immersion blender or a food processor mash the cooked carrot.
Add the walnuts and blend them all together.
In a saucepan, heat the milk of your choice and add the honey or maple syrup and the spices.
Mix in the carrot mix and simmer for 2 minutes.
Turn off the heat, ladle the drink into your saving glasses and sprinkle some cinnamon on top.
