Frittata, or as we Persians call it, Kuku can always make a good breakfast, lunch, brunch or even dinner. Not to mention it is an easy option after a long day of work. Adding some cheese and cream to broccoli will boast a revolutionary flavour combination for the broccoli lovers. It's also a great "breakfast pizza for kids". It is easy, delicious and nutritious. - 400 g (4 cups) broccoli florets and stems cut in smaller pieces
- 100 g (1 cup) any favourite grated cheese
- 5 large eggs
- 45 ml (3 tbsp) olive oil
- 125 ml (1/2 cup) heavy cream
- salt and pepper to taste
Preheat oven to 150C (300 F)
8 x 8 inch (20 x 20 cm) non-sticking pan
Pour hot water over the broccoli and boil it for 3-4 minutes over medium heat.
Rinse and set aside.
Leaving the olive oil, put all the ingredients in a large bowl and mix well.
Pour the olive oil in the pan and pour the mix in the pan.
Bake the frittata in the oven for 20-25 minutes until the top is firm.
Let cool.
Serve warm or at room temperature with your favourite bread.
